Ultimate slow cooker chicken

An easy slow cooker recipe for a whole chicken.  Serve hot with steamed rice.  Ready in 8+ hours. Preparation time 30 minutes cooking time 8 hours Image via :  http://keeprecipes.com/ Ingredients are as follows, suitable for 6 servings.       1 small sweet onion, sliced     8 cloves garlic     3/4 cup low sodium soy sauce     1/2 cup vinegar     1 (3 pound) whole chicken, cut into pieces Directions Place chicken in a slow cooker. In a small bowl mix the onion, garlic, soy sauce, and vinegar, and pour over the chicken. Cook on Low for 6 to 8 hours.

Chewy No Bake Chocolate Chip Granola Bars

Serves Image via  http://backforsecondsblog.com/ 24 Prep time 20 minutes Ingredients 1 1/2 cup old fashioned rolled oats 1 1/2 cup crisp rice cereal 3/4 cups mini semi sweet chocolate chips 4 tablespoons unsalted butter 1/2 cup brown sugar 1/3 cup honey 3 tablespoons maple syrup 1 teaspoon vanilla extract Directions Step 1 In a large bowl stir together the oats, cereal, and chocolate chips.  Set aside. Step 2 In a small sauce pan over medium heat melt the butter, sugar,  honey, and syrup, and stir until the sugar is dissolved - about 4-5 minutes.  Add vanilla and stir. Let cool in the pan for a few minutes. Step 3 Pour the syrup mixture over the cereal mixture and stir until  completely covered. Press firmly into a greased 9x13 pan.  Be sure to really press it into the pan or the bars won't stick together.  Let them

Quinoa with Roasted Vegetables

Prep Time:  5 minutes Cook Time:  60 minutes Total Time:  1 hour, 5 minutes Yield:  4 servings 1/2 cup - 1 cup Ingredients 1 cup quinoa 2 cups water 1 large yellow onion rough chopped 2 cups cherry tomatoes 1 cup corn 1 zucchini rough chopped 1 red pepper rough chopped 1 yellow pepper rough chopped 2 large carrot rough chopped 2 cloves garlic chopped Juice of 1/2 a lemon 2 T coconut oil salt and pepper to taste Instructions Add the quinoa and water to a small  saucepan. Bring to a boil, then turn down, cover and simmer until all the liquid has been absorbed. Mine took about 7-10 minutes. Set aside. Preheat oven to 375. Spread all the chopped veggies, except the corn, onto a lined  baking sheet . Brush them with the oil and sprinkle with salt and pepper. Roast for 1 hour. Stop halfway to flip the veggies over. When there is only about 5 minutes left, add in the corn. Once the vegetables are done, add them to the quinoa and mix well. This
